Gluten Free Hot Cross Buns: A Delicious Easter Treat!!

Enjoy these delicious Hot Cross Buns!

Ingredients:

1 1/2 cups almond flour
1/2 cup arrowroot starch
1/2 cup coconut flour
1/2 cup coconut sugar
1 tbsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground ginger
1/2 tsp sea salt
1/2 cup raisins or currants
1/2 cup unsweetened almond milk
1/4 cup coconut oil, melted
1/4 cup honey
2 large eggs
1 tsp vanilla extract
1 tsp baking soda
1 tbsp apple cider vinegar
1/4 cup almond flour (for the crosses)

Instructions:

  1. Preheat oven to 350°F (180°C) and line a baking tray with parchment paper.
  2. In a large mixing bowl, whisk together the almond flour, arrowroot starch, coconut flour, coconut sugar, cinnamon, nutmeg, ginger, and salt.
  3. Stir in the raisins or currants.
  4. In a separate bowl, whisk together the almond milk, coconut oil, honey, eggs, and vanilla extract.
  5. Add the wet ingredients to the dry ingredients and mix until a dough forms.
  6. In a small bowl, mix together the baking soda and apple cider vinegar. Add this mixture to the dough and stir until combined.
  7. Use a cookie scoop or spoon to form the dough into 8-10 buns and place them on the prepared baking tray.
  8. In a small bowl, mix together the remaining 1/4 cup of almond flour with a little bit of water to form a thick paste.
  9. Use a piping bag or plastic bag with the corner snipped off to pipe crosses onto the buns with the almond flour paste.
  10. Bake for 25-30 minutes or until the buns are golden brown and firm to the touch.
  11. Let the buns cool on the baking tray for a few minutes before transferring them to a wire rack to cool completely.
